New Study Explores the Relationship between good  Indoor Environmental Quality in Commercial Kitchens and Exhaust hood performance.

ASHRAE (American Society of Heating, Refrigeration and Air Conditioning Engineers) published a peer-reviewed study on the impact of PM2.5 (particulate matter 2.5 microns) on the Chef’s exposure. The study was commissioned by ASHRAE’s Kitchen Ventilation technical committee, TC 5.10, which has researched many aspects of commercial kitchens.

This latest study focuses on the exposure of high concentrations of PM2.5 and smaller particles on overall health and the relationship between a properly operating exhaust hood and the propagation of particulate matter.
